Cookie Dough Ice Cream
Cookie Dough & Ice Cream are 2 of my favourite things. This recipe came about because I just could not decide what to make on this particular day.
So I decided to experiment by mixing them both together, the result being this recipe which if I do say so is very yummy.
If you love sweet vanilla ice cream & delicious chocolate chip cookie dough, then this is the recipe for you. It is so easy & quick to make.
ღ 175g Butter softened (normal salted butter not unsalted)
ღ 60g Soft Brown Sugar
ღ 60g Golden Caster Sugar (normal Caster Sugar will work too)
ღ 1 teaspoon Vanilla Extract
ღ 2 Tablespoons Milk
ღ Pinch of Salt
ღ 200g Plain Flour
ღ 100g Milk Chocolate Chips (60g for dough 40g for Ice cream)
ღ 2 Large Mixing Bowls
ღ 1 Medium Mixing Bowl
ღ Electric Hand mix with Whisk attachments
or Stand Mixer with Whisk attachment
ღ Mixing Spoon
ღ 1 Baking Tray lined with greaseproof paper.
ღ 1 Air tight 3¾ litre container to put your Ice Cream mixture into.
or 3 Small containers that will hold 1 ¼ litres each
or 2 Medium containers that will hold approx 2 litres each
Serves/Makes: 3 ¾ litres
Making time: 35-40mins
Freezing time: 4 hrs (In total)
Total Time: 4hrs 40mins
ღ 2tsp Vanilla Extract
ღ 500ml Double Cream
ღ 150ml Milk
ღ 1 Tin(405g) Condensed Light Milk
ღ Pinch of Salt (If you would like more feel free to add it)
ღ 3D Edible Butterflies
6. Place the Cookie Dough Balls on the tray into
the Freezer for 30 Minutes
7. Make the Ice Cream whilst you wait.
8. After 1hr 45mins - 2hours take your ice cream out of the freezer & stir your ice cream making sure to move the Cookie Dough balls around too them pushing them evenly back around the container. (bringing some dough balls up to the top too) Then Place the container/s back into the freezer for at least another 2hours.
Tips & Tricks:
ღ Clear a space in your freezer before you start so your containers can sit flat.
ღ If the ice cream is very hard do not worry run your ice cream scoop or serving spoon under a hot tap to soften the ice cream as you scoop it up
ღ Do not worry if you over mix and bubbles form in your mixture your ice cream will still work & taste delicious
ღ Use Sea Salt in the Ice Cream for an alternative but still delicious taste
ღ Don't like Chocolate Chips?
Try Replacing them with Fudge Chucks, Maltesers, Marshmallows
or anything else that takes your fancy
